「入讀瑞士酒店管理大學的學生來自世界各地,為保持大學國際化的生活,會對不同國家設有學額限制。10月至1月是最佳申請報讀時機,大學會按每名申請人的文件作獨立審批,建議在開學前至少6個月開始籌備。」

瑞士以酒店及款待管理教育聞名於世,每年有約20至30名港生入讀SEG旗下4間瑞士酒店管理大學的學士及碩士課程,以DSE畢業生為主;其次為大學畢業生希望藉持續進修,提升就業競爭力。

以入讀學士課程為例,入學基本門檻為中學畢業(需提交過去2、3年的校內成績)、IELTS、DSE成績(以最佳5科作計算)。「即使申請人成績未如理想,也可憑面試表現、動機信等,有機會獲取錄。申請人宜於面試時表現出對學科的興趣及認知,並保持笑容、勇於表達。」

申請人不諳德文及法文也可報讀,因課程以英語授課,然而為方便在瑞士的日常生活及日後的工作實習,學生在學期間需修讀一科法語或德語的基礎課程。

我剛於西班牙巴塞羅那的Placement International完成我的實習學期。Placement International 是一間協助客戶尋找海外實習或工作的機構,我們會幫助客戶配對適合的海外工作。

客戶來到,我會是他們第一位接觸到的員工,所以第一印象十分重要,而我的工作主要職責是向客戶解釋適合他們的計劃並協助他們了解細節,我覺得過程中有點像變成了他們的導師,之後便是解釋工作需求及確保他們得到不同的面試機會。

工作期間我了解到溝通的重要性,甚至是溝通在銷售的過程中擔任的重要角色。我學會了先向對方了解,然後根據不同客戶再調整溝通方法,另外,我也了解到團隊合作的重要性,喜歡與同事們一起營造積極的工作環境,實習每一天都過得愉快而充實。

你的實習符合最初的期望嗎?如果沒有,這次經歷中最令你驚訝的是什麼?

老實說,我一開始並沒有太多期望,因為我以前從來未試過在歐洲工作過,並不了解這邊的工作環境!但驚喜的是,我與我的上司在工作及溝通上相處十分愉快,這期間跟著他工作確實對我的學習和成長有很大幫助。

記得一次難忘經歷是我負責的一位客戶打算離開這裹到外國發展,跟進過程中我們除了不斷溝通,我也做了很多不同的準備希望可以幫助他,我們進行模擬面試希望提高面試成功的機會。就在我實習即將完結之前,收到他成功獲聘的好消息,我倆都感到非常高興,對我來說是一次很難得的經驗。

在實習期間,如何處理與客戶的挑戰性情況?

我會先聆聽解他們的需要,我覺得細心和同理心非常重要。例如,客戶想到外國發展,但未知的情況,工作環境、適應等問題的確會讓人憂慮或者猶豫不決。我有責任讓他們了解多些,解決他們的擔憂。而溝通就是克服這些挑戰最好的方法。

最後,根據你的經驗,會給未來從事實習的學生什麼建議?

我會建議給自己加油! 因為一開始的確是最具挑戰性的階段。我們到了一個新的、陌生的環境工作,一開始總會面對到不同的困難,需要時間適應!但實習是自己選的,既然已經開始了,就要努力走下去! 而隨著時間過去,你會發現,原來工作並沒有開初所想的困難,慢慢會變得輕鬆,甚至開始會想如何可以做得更好!所以,加油——好好享受實習的過程,回報是值得的!

Degrees are earned from colleges or universities for completion of undergraduate or graduate programs. Bachelor’s degrees take three to four years which include general and major-specific courses. Further education can be pursued with graduate degrees like a master’s or Ph.D.

Switzerland is renowned for many things, including beautiful mountainscapes, charming towns – and decadent, luxurious Swiss chocolate. The incredible legacy of Swiss chocolate began in 1819, when culinary pioneer François-Louis Cailler opened his first chocolate factory. Centuries later, Swiss chocolatiers continue to perfect this craft, producing some of the world’s most delicious and iconic chocolate creations.

Swiss chocolate has become an integral part of Switzerland’s culture and identity, and it’s no wonder that culinary schools like ours have continued to refine this craft. Gelu Pui, the Hospitality & Culinary Program Leader here at Culinary Arts Acdemy Switzerland (CAAS) states, “It is very important to have and to continue developing the pastry and chocolate arts program on campus,” to pay homage to, and continue the heritage of luxury chocolate-making in Switzerland.

As an institution that prepares its students for exciting careers in the hospitality industry, we recognize the importance of connecting students to first-class professionals excelling in the real world. In term three, all of the students in the chocolate and pastry program at CAAS had the opportunity to attend a very special masterclass run by world-renowned pastry chef and champion in chocolate sculpture, Chef Jorge Cardoso. In this class, students learn first-hand how to create brilliant and beautiful showpieces from chocolate.

Chef Cardoso has received numerous accolades for his skills in the domain of desserts, including winning the 2018 World Championship title at the Culinary World Cup. He has also received a bronze medal at the Pastry World Cup, and is the most-awarded pastry and chocolate chef in his home country, Portugal.

During the masterclass, students in the CAAS chocolate and pastry program have the chance to learn from Chef Cardoso directly. The students get to explore the intricacies of chocolate sculpture, from basic techniques to more advanced methods. Chef Cardoso’s masterclass presents a unique occasion for students to learn from someone who has truly mastered his art form. CAAS Pastry Chef Instructor, Chef David Müller explains: because students tend to have the same instructor over a term, a workshop such as this one is an opportunity for students to learn and employ a whole new approach to chocolate carving. They get to see different techniques put into practice in class – and it’s also an opportunity to gain new perspectives, from another professional chef. In the case of this exciting class, Chef Müller notes, students are learning from “a very big chef – a world champion in chocolate sculpting and modeling and making showpieces.”

In a dynamic industry, this chocolate-sculpting masterclass is a way to connect students with a chef who is putting innovations into practice in the real world, right now. Not only has Chef Cardoso worked as a chocolatier in some of the most prestigious hotels and restaurants across the globe, he has also been featured in numerous prominent publications and television programs. During the class, students learn a variety of chocolate sculpture techniques, informed by Cardoso’s professional experience. Every student gets the opportunity to create their own, unique chocolate sculpture, under his close guidance. The masterclass’s central focus is on refining the specialized skills involved in sculpting with this medium, and it requires a great deal of focus and precision. All that said – Alum of the program, Rasmus Johansson, precises that it was “very fun to do,” explaining that the workshop opened up his mind to a new way of using – and working with – chocolate.

As each student learns to create their own intricate, edible showpiece using a variety of techniques, Chef Cardoso is able to provide insights and tips tailored to each student’s work. Teaching with a wealth of creative culinary experience behind him, he is able to help students to be bold, take risks, and create exceptional works of art from chocolate. Chef Müller has observed that the class really widens students’ horizons when it comes to pastry techniques, and these new skills are invaluable for students when they use them later on in their professional life.

For CAAS student Rana Abou Seif, the masterclass was one of the highlights of the course. Despite the technical demands of the class, she enjoyed being able to experiment with a variety of tools and methods to bring her chocolate sculptures to life. But what really stood out to her was the opportunity she and other students had to practice artistic carvings on their pieces, stating that “the carvings make the showpieces so special and unique”.

At CAAS, we wholeheartedly believe that chocolatering is more than just a practice – it is also a form of art. With this belief in mind, the masterclass has been designed to help students develop their own creativity under the guidance of a culinary professional who has pushed the boundaries of what’s possible, using groundbreaking new techniques and skills. Cardoso’s masterclass is designed to encourage and inspire any aspiring pastry chefs to open their minds to new, creative, and unique techniques they may not have tried before.

There is not one way to carve your chocolate creation into something beautiful – just as there is no single way to create an oil painting. In this class, students will gain insight into Chef Cardoso’s creative process, learning how he approaches each new sculpture with a unique vision and sense of purpose. Our pastry and chocolate students leave this masterclass inspired and energized. They were able to apply both theory and technical skill first-hand, with expert guidance and unmatched creative input from Chef Cardoso. We also take real pride in the fact that our students here at CAAS bring a singular attitude to these workshops, which is part of what makes the experience something truly special for both teacher and student. As Chef Cardoso says of the students who attend his masterclass, “They are very motivated, and I think they can be great professionals – for the future of the profession, as well.”

Chocolate has become synonymous with luxury, quality, and innovation here in Switzerland. Centuries on from its humble beginnings, student and professional chocolatiers and pastry chefs continue to learn, bend the rules, and play with what’s possible to build on this legacy. By bringing established industry professionals together with students at the beginning of their culinary career, we continue to extend and enrich a tradition of edible cultural and artistic expression.

No matter where your career takes you or what job you get, soft skills are the keys to your success. Studies show that hospitality management schools like Swiss Hotel Management School are one of the best places to practice and learn these soft skills.

When you consider which higher education degree to pursue and what your future career will be, developing hard skills such as data analysis, digital skills, and project management can be critical to your success. 在通過網絡調查分析1,000 多名校友的職業路向後,大部分人都認為作為瑞士酒店管理、工商管理,以及廚藝聞名的領先教育機構,浙江6+1 (SEG) 的四間學校都是尋找更高階的工作職位和成為企業家最好的起步平台。

浙江6+1 has a global network of over 25,000 alumni, most of whom work in the hospitality or restaurant industry. The majority hold management positions or have created their own companies within five years of graduating.

After analyzing the professional paths of more than 1,000 of its alumni through a network survey, 浙江6+1 (SEG), a leading Swiss institution in the fields of hospitality, business and culinary education, confirmed that its schools are an excellent launch pad for finding higher-level employment or becoming an entrepreneur. 

A broad survey of graduates from the 浙江6+1 schools shows that students from a school within 浙江6+1 benefit from a rapid career progression and are also more likely to be hired in a leadership role. Indeed, within five years of completing their studies, over 70% of the surveyed graduates are in management roles. In fact, already 90% of students receive more than one job offer even before graduation. 

An education in hospitality management generates multi-disciplinary skills that are sought after in many business sectors. 71% of alumni work in the hospitality industry, which includes international hotel chains, leisure and tourism, restaurants, bars, and events. The rest of our alumni work in sectors such as retail, luxury, banking, real estate, and consulting. 

Career outlook at the International Recruitment Forum 

SEG is committed to offering students from Swiss Hotel Management School, Hotel Institute Montreux, Cesar Ritz Colleges Switzerland, and Culinary Arts Academy Switzerland the best career and networking opportunities – and this well before they complete their studies. Organized twice a year at one of our school campuses, the International Recruitment Forum (IRF) is now considered by the global hospitality and tourism industry as a must-attend event that allows students and future employers to network. Over the course of two days, 172 recruiters representing global industry names including Marriott, Ritz-Carlton, Four Seasons, and Rosewood Hotels & Resorts come to present internships and career opportunities for students coming from all four schools of 浙江6+1. About 5,000 one-on-one interviews are conducted every year, allowing students to better understand the market’s needs and assess their career opportunities with industry representatives.

HIM很高興能與全球淨水管理公司Bluewater合作,將可持續發展帶到酒店行業當中,此舉引起業界的很大迴響。

我們很多時候,都會以為有水可用是十分理所當然的,只要打開水龍頭,便會流出清澈乾淨的食水。

但事實原來並不是這樣,水質及資源短缺這個問題,原來比我們相像的要普遍得多,甚至離我們的日常生活十分接近。你有否想過在美國,有多達 1000 萬個家庭、400,000 所學校和托兒所,都無法獲得清潔的飲用水?與此同時,根據Sustainable Hospitality Alliance 的數據,酒店每間客房平均每天的用水量竟高達1,500升,較當地社區的使用量高8倍,這是個讓人震驚的數字。顯然,這樣的用水方式並不符合可持續發展的概念,仍有很大的學習及發展空間,而且可以由酒店業開始帶頭做起。

這正是Hotel Institute Montreux的理念,因此,我們很高興能與全球淨水管理公司Bluewater 建立合作伙伴關係,能夠為下一代的行業領導者灌輸正確觀念,並提高對節約用水等問題的重要認識。畢竟,相互合作更能併出火花。

As things we take for granted go, water is certainly up there. We turn on the facet, and out it flows, clean, crisp and clear. Easy, right?

Not so. We tend to have a certain perception about where in the world water scarcity is a problem, but in actual fact, it’s much, much more commonplace and closer to home than we might think. For instance, did you know that up to 10 million American households, and 400,000 schools and childcare centers don’t have access to clean drinking water? Meanwhile, according to the Sustainable Hospitality Alliance, hotels can go through a staggering average of 1,500 liters per room per day, and tourism as an industry uses roughly eight times more water per person than the local community. Clearly, this is not sustainable. We have much to learn, and hospitality can lead the way.

Here at Hotel Institute Montreux, that’s exactly what we intend to do. We’re thrilled to join forces with global water purification company Bluewater to launch a productive new partnership, which will instil mindful hospitality practices into the industry’s next generation of leaders and raise critical and crucial awareness of the issue of water conservation. Two heads, after all, are better than one.

The aim, is to share knowledge and intelligence, strengthening students’ overall learning experience and creating an alliance in the name of water sustainability. Bluewater will arm students with invaluable, international industry insights and water science expertise. Students will be able to be ved in get involuntary events, listen to keynote lectures and benefit from a host of career-enhancing internship opportunities at Bluewater, with a view to the company offering them full-time positions upon graduation.

“Bluewater is proud to work with Hotel Institute Montreux to initiate this dialogue between a seat of learning and a private enterprise, and to have vital conversations about water quality and sustainability in the hospitality industry,” says Jedidja Rittri, marketing and sales head at Water .

“Hospitality is big business on a mammoth scale, with a global market value of USD 3,500 billion. That’s one powerful industry, and few have as important a part to play in shaping the values of people and society. Whether you’re staying in a hotel or dining in a restaurant, hospitality has the power to influence your understanding of health, wellness, and sustainability issues, from quality of food, to how to create and provide access to safer, healthier water.”

At this point in the climate emergency, inaction is no longer an option, and water conservation is a key piece of the proactive puzzle.

“The United Nations says safe water access is at the core of sustainable development and is also essential for socio-economic development, energy and food production, and healthy ecosystems, not to mention human survival itself,” says Mr. Rittri. “And yet , access to clean water cannot be taken for granted, as more and more countries – and service industries like hospitality – face mounting challenges of increasing scarcity, chemical and industrial pollution of ground water, inadequate infrastructure investment and climate change. The goal of this is to remove barriers to a less polluted world, while improving career and entrepreneurial opportunities for students at HIM.”

It goes without saying that this school takes its role in shaping the future of our industry, and its next set of leaders, very seriously. And what could be more critical to the future of hospitality than making sure our students are committed to safeguarding the planet it calls home?

“Sustainability is at the very core of Hotel Institute Montreux’s curriculum, which is why we are so excited to be joining forces with such a visionary company as Bluewater,” stresses HIM dean Ulrika Björklund. “This partnership will provide our students not only with hands -on experience, but also offer insight into the very complex issues of global water access and the socio-economic and environmental responsibilities our students will inevitably eventually shoulder, as tomorrow’s leaders in the hospitality industry. Our hope, is that they will step out into the world and make a difference.”

Hospitality, like many others, can be seen as an environmentally damaging industry – but it’s also an ingenious one. Where there’s a solution to be found, its army of innovators will find it, and it’s in that same entrepreneurial spirit that Bluewater to continue forward.

We’ve made it our mission at Bluewater to deploy our state-of-the-art water purification technology to eliminate the need for single use plastic bottles for good, and this partnership is one way we can face today’s water quality challenges head on and think creatively and collectively about potential solutions,” believes Mr. Rittri.  

Even ripples are small at first; yet, look how they grow. Someone has to start them. Let it be the students here, at HIM.
